  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups beef broth
  • Corn tortillas
  • Fresh cilantro and diced onion for garnish

Instructions

  1. Soak the dried chilies in hot water for 15 minutes until softened.
  2. In a blender, combine soaked chilies, onion, garlic, and diced tomatoes; blend until smooth.
  3. Place beef chuck roast in the slow cooker and pour the blended chili mixture over it.
  4. Add beef broth along with any additional seasonings like vinegar, oregano, cumin, bay leaves, salt, and pepper; mix well.
  5. Cover and cook on low for 8-10 hours until the beef is fork-tender.
  6. Shred the beef and mix it back with the sauce in the crock pot.
  7. Fry corn tortillas in a skillet until crispy; fill each tortilla with shredded beef mixture and garnish before serving.
