  • 3 lbs boneless, skinless chicken thighs
  • 1 cup light brown sugar
  • 1 cup soy sauce
  • ⅓ cup bourbon whiskey
  • 2 tablespoons apple cider vinegar
  • 4 cloves garlic, minced
  • ½ teaspoon ground ginger
  • ½ teaspoon red pepper flakes

Instructions

  1. Place chicken thighs at the bottom of the slow cooker.
  2. In a bowl, whisk together brown sugar, soy sauce, bourbon, apple cider vinegar, garlic, ginger, and red pepper flakes until well combined. Pour over chicken.
  3. Cover and cook on high for 4 hours or low for 6 hours until chicken is tender.
  4. Remove chicken; shred or chop as preferred.
  5. Combine cornstarch with water to make a slurry; stir into the sauce in the cooker to thicken.
  6. Return chicken to the sauce; mix well and cook for an additional 5–10 minutes.
  7. Serve over rice or in wraps, garnished with chopped green onions.
