  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes with juice
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large skillet over medium heat, brown ground beef until fully cooked.
  2. Add diced onion and minced garlic to the skillet; cook until the onion is translucent.
  3. Transfer the beef mixture to the slow cooker.
  4. Add kidney beans, black beans, corn, diced tomatoes (with juice), beef broth, chili powder, cumin, smoked paprika, salt, and pepper. Stir well.
  5. Cover and cook on low for about 6 hours or high for about 3 hours.
  6. Stir before serving; adjust seasoning if necessary.
