  • 1 lb. boneless skinless chicken breasts/thighs
  • 4 oz. can diced green chiles
  • 2 cups chicken broth
  • 1 cup chopped onion
  • 3 cloves minced garlic
  • 15 oz. can cannellini beans (drained)
  • 15 oz. can great northern beans (drained)
  • 1/2 tsp cumin
  • 1/2 tsp oregano (dried)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder
  • 8 oz. cream cheese (softened)
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp lime juice

Instructions

  1. Gather and prepare all ingredients by chopping the onion and mincing the garlic.
  2. In your slow cooker, combine diced green chiles, cannellini beans, great northern beans, onion, garlic, cumin, oregano, salt, black pepper, chili powder, lime juice, and cream cheese.
  3. Place chicken on top of the mixture and cover it well.
  4. Cook on low for 7 hours or high for 4 hours until the chicken is tender.
  5. Shred the chicken in the pot with two forks and stir everything together before serving.
