  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 28 ounces crushed fire-roasted tomatoes
  • 6 ounces cream cheese
  • 2 cups shredded cheddar cheese
  • 1 can mixed chili beans, drained
  • Chicken or beef broth

Instructions

  1. Gather all ingredients and finely chop onions and poblano peppers.
  2. (Optional) Brown the ground beef in a skillet over medium heat. Drain excess fat.
  3. In the slow cooker, combine browned meat (or raw), chopped onions, poblano peppers, spices, tomatoes, cream cheese, and enough broth to cover.
