  • 2 teaspoons salt
  • 1 tablespoon active dry or instant yeast
  • 1 1/2 cups cold whole milk
  • 1 1/2 cups unsalted butter (for layering)
  • 2 tablespoons all-purpose flour (for assembly)
  • 1 large egg
  • 2 tablespoons whole milk

Instructions

  1. In a stand mixer, mix flour, sugar, salt, and yeast at low speed. Add cold milk and softened butter until a dough forms.
  2. Knead on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise for about an hour.
  3. Roll out softened butter between parchment paper into a rectangle and chill.
  4. Roll out the risen dough into a rectangle large enough to encase the chilled butter. Enclose the butter completely.
  5. Roll and fold the dough in thirds like a letter three times, chilling as needed.
  6. Roll out final dough into one large rectangle; cut triangles and roll each from base to tip.
  7. Proof rolled croissants for about 30 minutes before brushing with an egg wash.
  8. Bake at 375°F (190°C) for approximately 18 minutes until golden brown.
