  • 25 g white sugar
  • 5 g salt
  • 5 g yeast
  • 70 g milk
  • 70 g water
  • 150 g unsalted butter (for dough and layering)
  • 400 g white sugar (for coating)

Instructions

  1. Prepare the butter layer by placing cold butter between parchment paper, flattening it into a square, and refrigerating until hard.
  2. In a mixing bowl, whisk together flour, sugar, yeast, and salt. Add cold milk and water along with a small amount of butter. Mix on low speed for about 10 minutes until smooth.
  3. Form the dough into a ball, wrap in plastic wrap, and refrigerate overnight.
  4. Roll out the chilled dough to a rectangle double the length of the butter layer; enclose the butter in the dough and seal edges.
  5. Roll out again to three times its original length, folding it over itself for layering; refrigerate for an hour.
  6. Repeat the folding process after an hour and chill again.
  7. Cut rolled dough into strips and chill for another 20 minutes.
  8. Assemble cruffins by rolling two strips together and placing them in greased muffin tins.
  9. Let rise in a warm place until they triple in size (2–3 hours).
  10. Bake at 356°F (180°C) for approximately 20 minutes or until golden brown.
