  • 1/4 cup Granulated Sugar
  • 1 tsp Salt
  • 2 1/4 tsp Instant Yeast
  • 1 1/4 cups Cold Whole Milk (or lactose-free)
  • 1 cup Unsalted Butter (cold)
  • 16 pieces Chocolate Batons or Semi-Sweet Chocolate
  • Confectioners’ Sugar (for dusting)

Instructions

  1. In a large bowl, mix flour, sugar, salt, and yeast. Slowly add cold milk until a rough dough forms. Knead until smooth, cover with plastic wrap, and let rest for 30 minutes.
  2. Roll cold butter between parchment sheets into a rectangle; chill until firm.
  3. Roll out dough into a rectangle twice the size of the butter; place butter in the center and fold dough over it like an envelope. Roll gently to incorporate.
  4. Fold dough into thirds, chill for 30 minutes, then repeat rolling and folding two more times.
  5. Roll out the laminated dough again into a large rectangle, cut triangles, place chocolate at the base, and roll tightly.
  6. Preheat oven to 400°F (200°C). Place croissants on a lined baking sheet; let rise for an hour. Brush with milk before baking for about 20 minutes until golden brown.
