  • 3 ½ cups peeled fresh ginger
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids

Instructions

  1. Cut the ginger in half; cube one half and shred the other.
  2. Simmer both ginger pieces with water for 1 hour and 15 minutes. Reserve ½ cup of the cooking liquid after draining.
  3. Chill the cooked ginger in the fridge for at least 4 hours.
  4. Combine chilled ginger, reserved water, and sugar in a large pot. Boil for 1 minute while stirring.
  5. Add liquid pectin and simmer for another 7 minutes, skimming foam as needed.
  6. Sterilize jars before filling them with marmalade, leaving about ¼ inch at the top.
  7. Process filled jars in boiling water for about 15 minutes; then cool completely.
