- 4 pieces uncooked turkey bacon, diced
- 1 small white onion, finely diced
- 1 jalapeno, diced (more for added heat)
- 4 garlic cloves, minced
- 1 bottle (12-ounce) dark Mexican beef broth
- 4 cans (15-ounce) pinto beans, rinsed and drained
- 1 tablespoon brown sugar
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- Juice of 1 lime
- Fresh cilantro for garnish
- In a large sauté pan over medium-high heat, cook the turkey bacon until crispy. Remove and set aside.
- In the same pan, sauté onion and jalapeno in reserved grease until soft. Add garlic and cook until fragrant.
- Stir in beef broth, rinsed pinto beans, brown sugar, oregano, chili powder, salt, and cumin; combine well.
- Reduce heat to medium-low and let simmer uncovered for about 15 minutes.
- Stir in turkey bacon and lime juice before serving topped with fresh cilantro.
