  • 4 pieces uncooked turkey bacon, diced
  • 1 small white onion, finely diced
  • 1 jalapeno, diced (more for added heat)
  • 4 garlic cloves, minced
  • 1 bottle (12-ounce) dark Mexican beef broth
  • 4 cans (15-ounce) pinto beans, rinsed and drained
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. In a large sauté pan over medium-high heat, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pan, sauté onion and jalapeno in reserved grease until soft. Add garlic and cook until fragrant.
  3. Stir in beef broth, rinsed pinto beans, brown sugar, oregano, chili powder, salt, and cumin; combine well.
  4. Reduce heat to medium-low and let simmer uncovered for about 15 minutes.
  5. Stir in turkey bacon and lime juice before serving topped with fresh cilantro.
