  • 5 Butter croissants
  • 1/2 cup Butter (unsalted, room temp)
  • 1/2 cup Granulated sugar
  • 1/2 tsp Salt
  • 2 Eggs
  • 1 cup Almond flour
  • 2 tbsp Flour (AP, plain)
  • 1 cup Water
  • 1/2 cup Granulated sugar
  • 10 tbsp Sliced almonds
  • 3 tbsp Powdered sugar

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Make the simple syrup by heating water and granulated sugar until dissolved; allow to cool.
  3. In a mixing bowl, beat together room temperature butter, granulated sugar, and salt until creamy. Add eggs one at a time, then mix in almond flour and all-purpose flour until smooth.
  4. Slice each croissant in half horizontally and brush the insides with simple syrup. Fill with almond cream before reassembling.
  5. Spread additional almond filling on top and sprinkle sliced almonds over each croissant.
  6. Bake for 15–20 minutes until golden brown. Let cool slightly before dusting with powdered sugar.
