  • 2 cups cooked rotisserie chicken (shredded)
  • 2 cups frozen mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • Pepper (to taste)
  • 1/2 cup chopped scallions
  • 3 cups grated cheddar cheese (divided)

Instructions

  1. Preheat your oven to 375°F.
  2. In a mixing bowl, combine cream of chicken soup and chicken broth until smooth.
  3. Grease a 9×13 casserole dish with cooking spray.
  4. Layer uncooked rice, shredded chicken, and frozen vegetables in the dish. Sprinkle with garlic powder, onion powder, Italian seasoning, pepper, scallions, and 1 cup of cheddar cheese.
