  • 1 lb boneless chicken thighs (chopped into quarters)
  • 1 large onion (diced)
  • 1 carrot (chopped)
  • 4 small russet potatoes (peeled and chopped)
  • 3 cups chicken stock
  • 1 tbsp vegetable oil
  • 3 tbsp gochujang
  • 3 tbsp soy sauce
  • 3 tbsp garlic (minced)
  • 1 tbsp white granulated sugar
  • 1 tbsp sesame oil
  • Green onions (for garnish)

Instructions

  1. In a small bowl, mix gochujang, soy sauce, minced garlic, sugar, and sesame oil until smooth.
  2. Heat vegetable oil in a large pot over medium heat. Sauté diced onions until translucent.
  3. Add chicken thighs to the pot and brown on both sides.
  4. Stir in chopped potatoes and carrots; cook for another minute.
  5. Pour in chicken stock and prepared sauce. Bring to a boil, then reduce heat to simmer.
  6. Cover and let simmer for 15-20 minutes until chicken is cooked through. Garnish with green onions before serving.
