  • 210 ml warm water (1 cup + 2 tbsp)
  • 1 tsp instant yeast
  • 1 tsp salt
  • 42.6 g butter (3 tbsp)
  • 32 g sugar (2 1/2 tbsp)
  • 8090 g cranberries (1/2 cup)
  • 8090 g raisins (1/2 cup)
  • 6070 g currants (1/2 cup)
  • 1/2 tsp cinnamon powder
  • 1/4 tsp cardamom powder
  • optional nutmeg

Instructions

  1. In a mixing bowl, combine warm water and yeast; let sit for about five minutes until frothy.
  2. In another bowl, whisk together flour, salt, sugar, and spices.
  3. Pour the yeast mixture into dry ingredients; add softened butter and stir until combined.
  4. Fold in cranberries, raisins, currants, and any additional fruits.
  5. Knead the dough on a floured surface for 8–10 minutes until smooth.
  6. Place in a greased bowl, cover, and let rise in a warm area for about two hours or until doubled.
  7. After rising, punch down the dough and shape into a loaf; place in a greased loaf pan.
  8. Cover and let rise for another hour before baking at 180°C (350°F) for about 40 minutes or until golden brown.
