  • 2 pounds Beef Chuck Roast (cut into 2-inch chunks)
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Coarsely Ground Black Pepper
  • 2 tablespoons Gluten-free All-Purpose Flour
  • 2 tablespoons Olive Oil
  • ½ Yellow Onion (chopped)
  • 4 Garlic Cloves (minced)
  • 1 Large Carrot (cut into 2-inch chunks)
  • 2 Yukon Gold Potatoes (diced)
  • 2 Cups Beef Broth
  • ¼ Cup Tomato Paste
  • 1 tablespoon Worcestershire Sauce
  • 1 Bay Leaf
  • 2 teaspoons Fresh Thyme Leaves (for garnish)

Instructions

  1. Preheat the oven to 325°F.
  2. Season the beef with salt and pepper, then coat with flour.
  3. In a Dutch oven, heat olive oil over medium heat and brown the beef in batches for about 3–4 minutes per side. Remove and set aside.
  4. In the same pot, sauté onions, garlic, and carrots for about 3 minutes until softened.
  5. Return the beef to the pot, add potatoes, beef broth, tomato paste, Worcestershire sauce, bay leaf, and thyme. Stir well.
  6. Bring to a simmer, cover with a lid, and transfer to the oven.
  7. Cook for 2–2.5 hours until the beef is tender; remove bay leaf before serving.
