  • 1 pound mild or spicy Italian sausage (casing removed)
  • 3 medium carrots (peeled and diced)
  • 1 medium onion (peeled and diced)
  • 23 ribs celery (diced)
  • 1 medium red or orange bell pepper (finely chopped)
  • 23 cloves fresh garlic (minced)
  • 7 cups low-sodium chicken broth
  • 1 can (14.5 ounces) petite diced tomatoes
  • 1 ½ cups Ditali pasta or another small pasta
  • 1 ½ cups fresh spinach (chopped)

Instructions

  1. In a large pot over medium-high heat, crumble the Italian sausage and cook until browned. Remove from pot and drain excess fat, leaving about two tablespoons.
  2. Add the onions, carrots, celery, and bell pepper to the pot. Sauté for about 5-7 minutes until softened. Stir in garlic and Italian seasoning; cook for another minute.
  3. Return the sausage to the pot along with chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10-15 minutes.
  4. Stir in Ditali pasta and cook until al dente, about 10 minutes.
  5. Add chopped spinach; cook just until wilted, about 1-2 minutes.
  6. Serve hot with freshly grated Parmigiano cheese and basil on top.
