  • 2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canola oil
  • 4 large eggs
  • 1 (15 oz) can pumpkin puree
  • 2/3 cup water
  • 1/2 cup cold butter for crumb topping
  • 3/4 cup all-purpose flour for crumb topping
  • 1 tsp ground cinnamon for crumb topping

Instructions

  1. Preheat oven to 350°F and prepare two greased 8×4 bread pans.
  2. In a bowl, mix flour, salt, baking soda, and spices.
  3. In another bowl, combine sugars and oil; then add eggs one by one.
  4. Mix in pumpkin puree and water until combined.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Divide batter into prepared pans and set aside.
  7. For the crumb topping, mix flour, brown sugar, and cinnamon; cut in cold butter until crumbly.
  8. Sprinkle topping over batter and bake for 55–65 minutes or until a toothpick comes out clean.
  9. Cool for 10 minutes before transferring to a wire rack.
