  • Small bunch fresh sage
  • 1 large head of garlic
  • 2/3 cup olive oil (or preferred vegetable oil)
  • 1 large egg, separated
  • 1 tsp Dijon mustard

Instructions

  1. In a large Dutch oven, heat the chicken stock with sage until simmering gently.
  2. Prepare the garlic by removing skins and slicing cloves in half lengthwise to remove any bitter shoots.
  3. Boil the garlic cloves in water for 3–4 minutes until softened, then drain and mash finely.
  4. Add mashed garlic to the simmering stock and continue to simmer for 10 minutes.
  5. In a small jar, combine egg yolk, mustard, salt, and oil; blend with an immersion blender until emulsified.
  6. Strain the soup if desired for a smoother texture; return to heat.
  7. Temper the mayonnaise with a ladle of hot soup before whisking it into the pot.
  8. Heat through gently without boiling; serve warm topped with croutons and garnishes.
