  • pounds potatoes, cubed
  • 3 tablespoons fresh parsley, chopped
  • 3 tablespoons fresh dill, chopped
  • 3 green onions, thinly sliced
  • ¼ cup cornichons, diced
  • 2 tablespoons olive oil
  • 2 tablespoons red apple vinegar or sherry vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon grainy mustard
  • 1 clove garlic, minced or grated (optional)
  • 1 tablespoon cornichon (pickle) juice (optional)
  • Salt and pepper, to taste

Instructions

  1. Boil the cubed potatoes in salted water until tender but firm, about 8–10 minutes. Drain and let cool slightly.
  2. In a small bowl, whisk together olive oil, vinegar, Dijon mustard, garlic (if using), and season with salt and pepper.
  3. In a large bowl, combine warm potatoes with parsley, dill, green onions, and cornichons. Pour dressing over the mixture and toss gently to coat.
