  • 60 ml milk
  • 120 ml water
  • 21 g active dry yeast
  • 50 g sugar
  • 550 g Manitoba flour
  • 2 eggs
  • 1 egg yolk
  • 5 g salt
  • 70 g unsalted butter
  • 750 ml vegetable oil (for frying)
  • 350 g chocolate spread

Instructions

  1. Combine lukewarm milk, water, yeast, and sugar in a bowl; let it sit until bubbly (about 10 minutes).
  2. In a stand mixer with a dough hook, add flour, eggs, egg yolk, salt, and the yeast mixture. Knead on low speed for about 6-8 minutes until elastic.
  3. Incorporate butter and knead for another 3-4 minutes.
  4. Cover and let the dough rise for about an hour; refrigerate for an additional 30 minutes.
  5. Roll out the dough into a rectangle; cut into triangles and form croissants. Let rise again until tripled in size.
  6. Heat oil to 170-180°C (340-355°F) and fry beignets until golden brown on both sides.
  7. Dust with sugar and fill with chocolate spread using a pastry bag.
