  • 4 cod fillets (about 6 ounces each)
  • 4 cloves of garlic, minced
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons lemon juice
  • Fresh parsley for garnish
  • 1 pound baby potatoes, halved or quartered
  • 3 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss halved baby potatoes with olive oil, salt, black pepper, and paprika. Spread them on a parchment-lined baking sheet.
  3. Roast the potatoes in the preheated oven for about 20 minutes until golden brown.
  4. While the potatoes roast, mix melted butter, minced garlic, and lemon juice in a separate bowl.
  5. After 20 minutes, remove the potatoes and push them to one side. Place cod fillets on the other side and brush generously with the garlic butter mixture.
  6. Bake everything together for an additional 10–12 minutes until the cod flakes easily with a fork.
