  • ½ cup chicken broth
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook penne pasta according to package instructions until al dente. Drain and set aside.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. In a large skillet over medium-high heat, heat olive oil and cook chicken until golden brown (about 6–8 minutes). Remove from skillet.
  4. In the same skillet, melt butter and sauté minced garlic for 1–2 minutes.
  5. Stir in heavy cream and chicken broth; simmer gently.
  6. Add mozzarella, cheddar, and Parmesan cheeses; stir until melted and smooth.
  7. Return chicken to the skillet; toss to coat with sauce.
  8. Mix in cooked penne pasta until fully combined.
