  • 6 slices Turkey Bacon
  • 1 red onion
  • 4 green onions
  • 6 Tbsp apple cider vinegar
  • 3 Tbsp water
  • 2 Tbsp extra-virgin olive oil
  • 2 Tbsp wholegrain Dijon mustard
  • 1 tsp granulated sugar
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Boil baby potatoes in salted water until tender (15-20 minutes). Drain and let cool.
  2. Cook Turkey Bacon in a skillet over medium heat until crispy (about 8 minutes). Reserve some fat from the pan.
  3. Sauté chopped red onion in reserved bacon fat for about 3 minutes.
  4. Whisk together apple cider vinegar, olive oil, mustard, and sugar; simmer briefly.
  5. Combine warm dressing with potatoes, add green onions and crumbled bacon, then toss gently.
