  • 2 cups lukewarm water
  • 2 teaspoons granulated sugar
  • 1 and 1/2 teaspoons instant yeast
  • 4 cups all-purpose flour
  • 1/4 cup olive oil
  • 14 oz feta cheese
  • 2 oz butter (melted) plus 2 tablespoons cream or milk

Instructions

  1. In a stand mixer bowl, combine lukewarm water, sugar, and yeast. Let it sit for about 8-10 minutes until foamy.
  2. In another bowl, whisk together remaining flour and salt. Add this mixture along with olive oil to the yeast mixture.
  3. Knead the dough on low speed for about 10 minutes until smooth. Place in an oiled bowl, cover, and let rise in a warm area until doubled (about 1.5 to 2 hours).
  4. Punch down the risen dough and transfer it to a lightly oiled surface. Press into a circle and crumble feta over one half; fold over to encase the filling.
  5. Shape it into a round loaf on a baking tray lined with parchment paper. Cover with a towel and let rise for another 30 minutes while preheating the oven to 425°F (220°C).
  6. Make indentations on top of the loaf; brush melted butter mixed with cream over the surface and sprinkle sesame seeds if desired.
  7. Bake for 25-30 minutes until golden brown. Let cool for at least 15 minutes before slicing.
