  • 2 cups water
  • Pinch of salt
  • 2 carrots, sliced into coins
  • 1 tsp olive oil
  • 1 tsp dried thyme or oregano
  • Salt & pepper to taste
  • 3 tbsp mayonnaise
  • 1 tbsp Greek yogurt
  • 1 tsp fresh lemon juice
  • 1 tsp red chili flakes
  • Black pepper to taste
  • Fresh parsley, chopped

Instructions

  1. In a medium saucepan, cook brown rice with water and salt until tender (about 20 minutes).
  2. Season chicken with olive oil, garlic powder, smoked paprika, salt, and pepper; grill for 5-7 minutes per side until cooked through.
