Ingredients

  • Baking spread (or butter)
  • Caster sugar
  • Large eggs
  • Vanilla extract
  • Self-raising flour
  • Black food coloring
  • Tinned custard (with green food coloring)
  • Icing sugar
  • Green and yellow food coloring for buttercream
  • Candy eyes

Instructions

  1. Preheat the oven to 140C Fan/325F/Gas Mark 3 and line a cupcake tin with cases.
  2. Beat together softened baking spread and caster sugar until fluffy. Add eggs and vanilla extract, mixing well.
  3. Gradually fold in self-raising flour, then stir in black food coloring until evenly distributed.
  4. Divide the batter into lined cupcake cases and bake for 25–30 minutes or until a skewer comes out clean. Cool completely on a wire rack.
  5. Fill cooled cupcakes with green-tinted custard using a corer or knife.
  6. For the buttercream, mix softened butter and icing sugar until smooth, adding vanilla extract, milk, and food coloring to reach your desired shade.
  7. Pipe or spread the buttercream on each cupcake and decorate with candy eyes.
