  • 2/3 cup maple syrup or honey
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, mix whole wheat flour, ground cinnamon, ground nutmeg, baking soda, baking powder, and salt.
  4. Gradually combine the dry ingredients with the wet mixture until just incorporated; avoid over-mixing.
  5. Line a muffin tin with liners or grease it lightly. Fill each muffin cup about three-quarters full with batter.
  6. Bake in the preheated oven for about 18 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before transferring to a wire rack.
