  • 4 pounds apples (about 9 medium-sized), peeled and cored
  • 1 cup apple cider
  • 3/4 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon kosher salt
  • Juice of half a lemon (about 1 tablespoon)

Instructions

  1. In a large pot, combine the apples, apple cider, brown sugar, cinnamon, cloves, and salt. Cook over medium-low heat uncovered for about 1 hour until apples are soft.
  2. Use a hand blender to puree the mixture until smooth. If using a regular blender, ladle the mixture into batches.
  3. Return the puree to the pot and continue cooking uncovered for another hour until thickened and deep mahogany in color.
  4. Stir in the lemon juice before transferring to jars for storage in the refrigerator.
