  • 3 medium sweet potatoes
  • 2 apples
  • 1/3 cup honey
  • 1/4 cup butter
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • Optional: chopped toasted pecans

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Bake un-pierced sweet potatoes on a baking sheet for about 40-45 minutes until soft. Allow them to cool.
  3. Peel, slice, and core the apples; drizzle with lemon juice to prevent browning.
  4. Once cooled, peel the sweet potatoes and slice them into 1/2-inch thick rounds.
  5. In an 8×8 or 9×9 baking dish, layer the apple slices and sweet potato slices alternately.
  6. In a small saucepan, melt honey, butter, cinnamon, and vanilla over low heat until combined; remove from heat.
  7. Optionally toast chopped pecans in the oven for about 5 minutes until fragrant.
  8. Pour the honey mixture over the layered ingredients; sprinkle with toasted pecans if desired.
  9. Bake at 350°F (175°C) for an additional 15-20 minutes until heated through.
