  • 1/2 cup semi-sweet chocolate chips
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs, room temperature
  • 1 cup sour cream
  • 1/4 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon vanilla extract
  • 1 cup whipped cream
  • 2 maraschino cherries
  • 1/4 cup chocolate shavings

Instructions

  1. Preheat oven to 350°F (175°C). Grease a springform pan and line the bottom with parchment paper.
  2. In a bowl, mix melted butter and sugar; stir in eggs and vanilla. Add flour mixture and chocolate chips. Pour into the prepared pan and bake for 20–25 minutes until set.
  3. Beat cream cheese until smooth; add sugar and vanilla. Mix in eggs one at a time followed by sour cream and heavy cream.
  4. Pour cheesecake filling over cooled brownie base; bake at 325°F (163°C) for 55–60 minutes until slightly jiggly. Cool in oven for an hour then chill in refrigerator for at least 4 hours.
  5. For hot fudge sauce: Melt chocolate chips with heavy cream and butter over low heat; stir in vanilla.
  6. Drizzle hot fudge over chilled cheesecake; top with whipped cream and cherries before serving.
