  • 4 boneless, skinless chicken breasts
  • 1 cup crumbled feta cheese
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red apple vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for serving)

Instructions

  1. In a medium bowl, whisk together honey, olive oil, red apple vinegar, garlic, oregano, red pepper flakes, salt, and pepper.
  2. Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Seal and refrigerate for at least 30 minutes (preferably 2-4 hours).
  3. Preheat the oven to 400°F (200°C). Remove chicken from marinade and discard the marinade.
  4. Place chicken in a baking dish and evenly spoon the feta mixture over each piece.
  5. Bake for 25 to 30 minutes until chicken is cooked through (165°F / 75°C) and feta is golden.
  6. Let rest for 5 minutes before serving. Garnish with fresh parsley and serve with lemon wedges.
