  • 2 tablespoons white apple vinegar
  • 2 tablespoons chicken stock
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1/2 teaspoon Dijon mustard
  • 2/3 cup olive oil
  • 1/4 cup red onion, finely diced
  • 2 tablespoons chopped fresh tarragon
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Boil the small white potatoes with salt in a large pot until barely tender (10-15 minutes). Drain and let them steam covered for another 15-20 minutes.
  2. In a separate bowl, whisk together the white apple vinegar, chicken stock, lemon juice, garlic, mustard, salt, and pepper. Gradually mix in olive oil to create an emulsion.
  3. Cut cooled potatoes into quarters or halves and place them in a mixing bowl.
  4. Pour dressing over the potatoes and mix in red onion, tarragon, and parsley. Adjust seasoning as needed.
  5. Refrigerate for at least a few hours before serving to blend flavors.
