  • 2 carrots (diced)
  • 2 stalks celery (diced)
  • 2 zucchini (diced)
  • 1 bell pepper (cored and diced)
  • 1 can tomato juice (19 ounces)
  • 1 can diced tomatoes (28 ounces)
  • 4 cups vegetable broth
  • 1/2 cup small pasta
  • 1 can cannellini or kidney beans (rinsed and drained)
  • 2 cups baby spinach
  • Salt and pepper to taste
  • 1 tablespoon dry parsley
  • ½ tablespoon oregano
  • 1 bay leaf
  • Fresh parsley or basil for garnishing

Instructions

  1. Chop the onions, carrots, celery, zucchini, and bell pepper.
  2. Add chopped vegetables to the Instant Pot with tomato juice, diced tomatoes, vegetable broth, pasta, parsley, oregano, and bay leaf.
  3. Seal the lid securely and set to Manual mode at high pressure for 10 minutes.
  4. Perform a quick release of steam once cooking is complete.
  5. Season with salt and pepper to taste.
  6. Stir in rinsed beans and baby spinach; let rest for an additional 5 minutes before serving.
