  • 4 chicken breasts, pounded thin
  • 3 eggs, whisked
  • ½ cup all-purpose flour
  • 1½ cups Italian-style panko breadcrumbs
  • 2 cups cherry tomatoes
  • 1½ cups fresh basil leaves, sliced into thin strips
  • 1 burrata, torn into pieces
  • 2 tbsp olive oil
  • ½ tsp kosher salt
  • ¼ cup dry apple cider vinegar
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • Salt and freshly ground black pepper, to taste
  • Oil for shallow frying
  • 2 tbsp balsamic glaze

Instructions

  1. Start by placing each chicken breast between plastic wrap. Use a meat mallet to pound them to an even thickness. Season both sides with kosher salt and freshly ground black pepper.
  2. Set up three bowls for breading. Fill one with flour, another with whisked eggs, and the last with panko breadcrumbs. Coat each chicken cutlet in flour, shake off excess flour, dip into the egg mixture, and coat with breadcrumbs thoroughly.
  3. Heat oil in a cast-iron skillet to about 325°F (160°C). Fry each breaded cutlet for 2-3 minutes on each side until golden brown and crispy. Remove from the skillet and place on paper towels to drain excess oil.
  4. In the same skillet used for frying, heat olive oil over medium heat. Add cherry tomatoes and cook for about 5 minutes until they start to blister. Add minced garlic and salt; cook for an additional minute. Pour in the apple cider vinegar to deglaze the pan while stirring to incorporate all flavors. In a bowl, mix the tomato mixture with chopped basil, lemon juice, and lemon zest.
  5. Arrange crispy chicken cutlets on a serving plate. Top generously with the tomato basil mixture and pieces of burrata cheese. Drizzle balsamic glaze over everything just before serving.
