  • 1 pound skinless, boneless chicken breasts (diced)
  • 2 cups broccoli flowers
  • 1 red bell pepper (chopped)
  • 2 cups fresh pineapple chunks
  • 1/4 cup reduced-sodium soy sauce
  • 1/4 cup pineapple juice
  • 3 tablespoons honey
  • 2 teaspoons grated ginger

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season diced chicken with salt and pepper and sauté until golden brown (5–7 minutes). Remove from skillet.
  2. In the same skillet, add minced garlic, broccoli flowers, and red bell pepper. Sauté for about 3–4 minutes until tender-crisp.
  3. Combine soy sauce, pineapple juice, honey, and grated ginger in a bowl. Pour into the skillet with vegetables.
  4. Return chicken to the skillet along with pineapple chunks. Stir well to coat everything in the sauce and cook for an additional 3–5 minutes until heated through.
