  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 4 large eggs
  • 1/2 cup fresh lemon juice
  • Optional: 1 tablespoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, powdered sugar, salt, melted butter, and vanilla until crumbly. Press into a lined 9×9-inch baking pan.
  3. Bake crust for 18-20 minutes until golden brown.
  4. In another bowl, whisk together granulated sugar and optional lemon zest. Add flour, eggs one at a time, and fresh lemon juice; mix until smooth.
  5. Pour filling over hot crust and bake for another 20-25 minutes until set.
  6. Allow cooling at room temperature for an hour, then chill in the refrigerator for at least two hours before serving.
