  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 tbsp fresh ginger, grated
  • Zest of 1 lemon
  • 1/4 cup lemon juice
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup jasmine or basmati rice
  • 1 cup coconut milk
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1/4 cup diced red onion
  • 1 tbsp lime juice
  • Fresh cilantro, chopped (optional)

Instructions

  1. Rinse the rice under cold water. In a pot or rice cooker, combine rinsed rice with coconut milk, water, and salt. Cook according to instructions until fluffy.
  2. In a mixing bowl, whisk together ginger, lemon zest and juice, honey, soy sauce, olive oil, salt, and pepper. Add chicken pieces to marinade for at least 15 minutes.
  3. Heat a skillet over medium-high heat. Add marinated chicken along with marinade; cook for about 10–15 minutes until browned.
  4. For the salsa, combine pineapple, mango, red onion, lime juice, cilantro (if desired), salt, and pepper in a bowl.
  5. Serve coconut rice topped with sautéed chicken and pineapple mango salsa.
