Ingredients

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the crust, mix rolled oats, all-purpose flour, brown sugar, and salt in a bowl. Melt the unsalted butter and combine it with the dry ingredients until crumbly. Press two-thirds of this mixture into the bottom of a greased baking dish.
  3. In another bowl, whisk together fresh lemon juice, lemon zest, granulated sugar, eggs, and cornstarch until smooth. Pour this lemon filling over the crust.
  4. Sprinkle the remaining crumble mixture over the top evenly.
  5. Bake for about 38 minutes until set and lightly browned. Let cool completely before slicing into squares.
