  • 1 cup dry quinoa
  • 1 cup water or broth
  • 1 tsp olive oil
  • Pinch of salt
  • 1 tbsp chopped parsley (optional)
  • 1 cup broccoli florets
  • Salt for seasoning

Instructions

  3. Rinse quinoa under cold water. In a medium saucepan, combine quinoa, water (or broth), and salt. Bring to a boil, then cover and simmer for 15 minutes until liquid is absorbed. Fluff with a fork.
  4. Place broccoli florets in a steamer basket over boiling water. Steam for about 4 minutes until tender but vibrant.
  5. On a plate, layer fluffy quinoa as a base, top with grilled chicken slices, and serve steamed broccoli on the side.
