  • 4 1/4 cups all-purpose flour + additional flour for later use
  • 4 1/2 tsp instant dry yeast
  • 1 Tbsp + 1 tsp poppy seeds – optional
  • 1 tsp fine salt
  • 1 cup buttermilk, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, room temperature
  • 2 large eggs, room temperature
  • 2 Tbsp fresh lemon zest
  • 1/2 cup granulated sugar (for filling)
  • 1/2 cup packed light brown sugar (for filling)
  • 2 Tbsp fresh lemon zest (for filling)
  • 1/2 cup unsalted butter, softened (for filling)
  • 2 cups powdered sugar (for icing)
  • 1/4 cup fresh lemon juice (for icing)
  • 2 Tbsp unsalted butter, melted (for icing)
  • Fresh Lemon Zest for garnish

Instructions

  1. In a large bowl or stand mixer, mix flour, yeast, poppy seeds (optional), and salt.
  2. In another bowl, whisk buttermilk, sugar, butter, eggs, and lemon zest until smooth. Gradually combine wet and dry ingredients.
  3. Knead the dough for 5-7 minutes until smooth; let it rise in a greased bowl until doubled in size (30-45 minutes).
  4. Prepare the filling by mixing granulated sugar, brown sugar, lemon zest, and softened butter.
  5. Roll out the dough into a rectangle and spread the filling evenly over it.
  6. Roll tightly into a log and cut into even pieces using dental floss.
  7. Place rolls in a greased pan lined with parchment paper; allow to rise again for about 30 minutes.
  8. Preheat oven to 350°F (175°C) and bake for approximately 28 minutes until golden brown.
  9. For icing, whisk powdered sugar with lemon juice and melted butter; drizzle over warm rolls.
