  • 1/4 cup extra virgin olive oil
  • 46 garlic cloves, lightly crushed
  • 1 finely diced celery rib
  • 1 finely diced yellow onion
  • 1 finely diced fennel bulb
  • A pinch of peperoncino or red pepper flakes
  • 3 thyme sprigs
  • 1 bay leaf
  • 1 teaspoon sea salt
  • 1 cubed yellow potato
  • 4 cups vegetable or chicken broth
  • 4 cups water

Instructions

  1. Rinse lentils under cold water, checking for debris.
  2. In a large pot, heat olive oil over medium heat. Add garlic, celery, onion, fennel, thyme, bay leaf, and red pepper flakes; sauté until softened.
  3. Add cubed potatoes and broth; bring to a boil until potatoes begin to soften.
  4. Stir in rinsed lentils along with remaining broth and water; reduce heat to simmer. Cover and cook for about 45 minutes until lentils are tender.
  5. Optional: For croutons, toss bread cubes with olive oil and seasoning; bake until crisp.
  6. Remove thyme sprigs and bay leaf before serving hot with a drizzle of olive oil and optional croutons.
