  • 1 bay leaf
  • 8 cups seafood or chicken stock
  • 1 pound andouille sausage, sliced
  • 1 pound shrimp, peeled and deveined
  • 1 pound crabmeat
  • 1 pint of oysters, shucked (optional)
  • 4 green onions, sliced
  • 1 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Cooked white rice

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Gradually stir in flour to create a roux. Cook for 20–30 minutes until it turns dark brown.
  2. Add diced onion, bell pepper, and celery; sauté for 5–7 minutes until softened.
  3. Stir in minced garlic along with Cajun seasoning. Cook for an additional minute.
  4. Gradually pour in stock while stirring; bring to a boil.
  5. Add sliced andouille sausage; reduce heat and simmer for 20 minutes.
  6. Introduce shrimp, crabmeat, and optional oysters; simmer for another 10–15 minutes until seafood is cooked through.
  7. Season with salt and pepper to taste before serving hot over cooked white rice.
