  • 375 g eating apples (e.g., russets)
  • 45 g butter (for custard)
  • 60 g caster sugar (for custard)
  • 500 ml whole milk
  • 3 large egg yolks
  • 60 g demerara sugar (for topping)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Peel and core both types of apples; chop into small chunks.
  3. Arrange the cooking apples at the bottom of a baking dish and top with the eating apples.
  4. In a saucepan over medium heat, melt the butter; add caster sugar and lemon rind until combined.
  5. Gradually whisk in plain flour until smooth, then slowly pour in milk while whisking continuously.
  6. Cook on low heat until thickened; remove from heat and stir in egg yolks and vanilla.
  7. Pour custard over the apples evenly; sprinkle demerara sugar and cinnamon on top.
  8. Bake for about 20 minutes or until golden brown.
