  • 1 head green cabbage (9001100 g), cut into wedges
  • 3 tbsps olive oil
  • 2 tbsps butter
  • ½ cup finely diced red onion
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken or vegetable broth
  • 4 oz. full-fat cream cheese, softened
  • 1 cup heavy cream
  • ½ cup julienned sun-dried tomatoes in oil
  • 1 tsp dried oregano leaves
  • 1 tsp dried thyme leaves
  • ½ tsp dried rosemary leaves
  • 1 tsp table salt
  • ½ tsp black pepper
  • 1 tsp red pepper flakes (optional)
  • ½ cup grated Parmesan cheese for garnish
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sear cabbage wedges in olive oil in a cast iron skillet for 2-3 minutes on each side until golden brown. Season with salt and pepper.
  3. In the same skillet, cook red onion in butter until soft, then add garlic.
  4. Deglaze the pan with chicken broth, scraping up browned bits.
  5. Add cream cheese and whisk until smooth; stir in heavy cream, sun-dried tomatoes, herbs, salt, and pepper.
  6. Simmer for 2-3 minutes until slightly thickened; remove from heat.
  7. Combine grated Parmesan with the sauce before nesting cabbage wedges back in; spoon sauce over them.
  8. Cover and bake for 45 minutes; uncover and baste with sauce before baking an additional 15-20 minutes until tender.
