Ingredients

  • Homemade or frozen meatballs (18-20 oz.)
  • Olive oil
  • Yellow onion
  • Garlic
  • Italian seasoning
  • Tomato paste
  • Chicken broth
  • Crushed tomatoes
  • Uncooked rotini pasta
  • Baby spinach
  • Heavy cream
  • Kosher salt and fresh cracked pepper
  • Parmesan cheese and parsley for garnish

Instructions

  1. If using homemade meatballs, prepare them according to your recipe; if using frozen, thaw overnight.
  2. In a large pot over medium heat, sauté diced onions in olive oil until golden brown (6-8 minutes). Add minced garlic, Italian seasoning, tomato paste, salt, and pepper; cook for 1 minute until fragrant.
  3. Deglaze the pot with some chicken broth, scraping up browned bits.
  4. Stir in remaining chicken broth, crushed tomatoes, rotini pasta, and cooked meatballs. Season as needed with salt and pepper.
  5. Bring to a simmer over medium-high heat; reduce heat to low and cover. Simmer for 12-15 minutes until pasta is al dente.
  6. Stir in baby spinach until wilted; add heavy cream and warm through.
  7. Adjust seasonings before serving; garnish with Parmesan cheese and parsley.
