  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. In a large mixing bowl, combine sliced onions, bell peppers, cherry tomatoes, minced garlic, olives, olive oil, oregano, salt, and pepper. Toss until well coated.
  3. Spread the vegetable mixture evenly in the baking dish. Place fish fillets on top and drizzle with lemon juice and zest; season with additional salt and pepper if desired.
  4. Bake uncovered for 20–25 minutes until the fish is opaque and flakes easily with a fork.
