  • 1/3 to 1/2 cup canola oil
  • 3 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper
  • 2 cups cooked corn
  • 1 to 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1/4 teaspoon chili powder
  • 1/4 cup cilantro
  • 1/2 jalapeno (chopped)
  • 2 green onions (sliced)
  • 1/2 teaspoon garlic salt
  • 6 to 12 corn tortillas
  • 1 to 2 avocados (sliced)
  • 1/2 cup cotija cheese
  • Cilantro (for garnish)
  • 1 cup sour cream
  • 3 tablespoons taco sauce

Instructions

  1. Marinate the chicken: Mix oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper in a bowl. Coat chicken and let sit for at least 15 minutes.
  2. Prepare the street corn: Combine cooked corn with mayonnaise, lime juice, chili powder, cilantro, jalapeño, green onions, and garlic salt in another bowl.
  3. Grill the chicken: Preheat grill over medium-high heat and cook chicken for 6–7 minutes on each side until fully cooked. Let rest before slicing.
