  • 160 g all-purpose flour
  • 60 g powdered sugar
  • 115 g unsalted butter, cold and cubed
  • 1 egg yolk
  • 1 medium apple, peeled and diced
  • 80 g mixed berries (fresh or frozen)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1 tsp cornstarch

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a mixing bowl, combine flour and powdered sugar. Blend in cold butter until crumbly.
  3. Stir in egg yolk; add cold water if needed to form dough. Chill for 30 minutes.
  4. Prepare the filling by mixing diced apple, berries, sugar, lemon juice, cinnamon, and cornstarch.
  5. Roll out chilled dough and cut into circles to fit muffin tin. Place dough in tin and fill with fruit mixture.
  6. Bake for 25-30 minutes until golden brown; cool slightly before serving.
