  • ¼ cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 3.2 ounces dark or semi-sweet chocolate, chopped
  • 2 tablespoons salted butter, melted
  • ½ cup melted coconut oil or salted butter
  • ½ cup brown sugar
  • 2 teaspoons vanilla extract
  • 2 room temperature eggs
  • ½ cup pumpkin butter
  • ½ cup pumpkin puree
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 tablespoon cinnamon sugar (optional)

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with paper liners.
  2. In one bowl, mix together the molten center ingredients: egg, sugar, cocoa powder, melted butter, and chopped chocolate.
  3. In another bowl, whisk together coconut oil (or butter), brown sugar, vanilla extract, eggs, pumpkin butter, and pumpkin puree. Add dry ingredients and gently fold until just combined.
  4. Spoon half the batter into each muffin cup, add 1 teaspoon of the molten mixture in the center, and top with remaining batter.
  5. Bake for 18–20 minutes until tops are set but still slightly jiggly.
