  • 12 ounces spaghetti
  • 2 boneless, skinless chicken breasts
  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper

Instructions

  1. Cook spaghetti per package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with paprika, Italian seasoning, salt, and pepper, then cook until golden brown (5-7 minutes). Remove and set aside.
  3. In the same skillet, melt butter and sauté chopped onion for 3-4 minutes until softened. Add minced garlic and cook for another 30 seconds.
  4. Pour in chicken broth and heavy cream; bring to a gentle simmer. Let thicken slightly (about 5 minutes).
  5. Return cooked spaghetti and chicken to the skillet; toss to coat in sauce.
  6. Sprinkle cheese on top, cover with a lid for 2-3 minutes until melted.
  7. Garnish with fresh parsley before serving warm.
